Ryan and Sara Jo Mathews, owners of Borracho's Ryan & Sara

Borracho's sits in a century-old building in the heart of Old Town Las Vegas, on Bridge Street — the kind of block where a lot of this town's history happened, and where the next chapter of it is still getting written most nights of the week.

Ryan runs the kitchen as Executive Chef, and Sara runs the operations side — the two halves that make "full kitchen, full bar" actually true instead of a tagline.

The bar takes its name seriously in one sense and not at all in another: a genuinely Norteño approach to craft beverages — New Mexico spirits, classic cocktails, local beer — served without an ounce of pretension.

The Beginning

The day it all started

In November 2019, Sara bought the historic building on Bridge Street that would eventually become Borracho's — freshly engaged to Ryan, and with no idea what the next few years had in store. The pandemic hit not long after, closing that first bar down entirely. Rather than walk away, Sara and Ryan regrouped and built two more concepts, Prairie Hill Café and Byron T's Saloon, before pouring everything into reopening — this time as Borracho's.

The Reopening

Back open, same envelope-pushing spirit

Before doubling down on Borracho's, the owners ran two other Las Vegas spots — Prairie Hill Cafe and Byron T Saloon — and closed both to put everything into this reopening. Borracho's has a track record of being first in town for things other places wouldn't touch: the first Las Vegas venue to put on a drag show, the first to host a burlesque night.

Still grateful, every single night

On August 21, 2026, Ryan and Sara marked one year since reopening Borracho's — and they're not shy about who made it possible. Not just the two of them, but the staff who show up night after night and the regulars who kept coming back and telling their friends.

A year in, the gratitude hasn't worn off. If anything, it's grown — for a town that showed up for something a little different, and for a crew that helped build it right alongside them.
